Slow-Cooker Split Pea & Ham Soup

Equipment

  • Slow cooker

Ingredients
  

  • 1 pound dried split peas, rinsed
  • 2  large russet potatoes, peeled and diced
  • 1 teaspoon ground white, green, or black pepper
  • 3 bay leaves
  • 3 large carrots, peeled and sliced
  • 1 tablespoon minced garlic
  • 6 cups low-sodium chicken broth
  • 1 large yellow onion, chopped
  • 2 tablespoons fresh oregano, stems removed and chopped or 2 teaspoons dried
  • 2 tablespoons fresh parsley, stems removed and chopped or 2 teaspoons dried

For the ham: choose one of the following

  • 2 1/2 cups diced ham
  • leftover ham bone with meat on it
  • 1 ham hock

Instructions
 

  • Add all ingredients to slow cooker and mix well. Cook on low for 8 to 10 hours or high for 5 to 6 hours.
    Stir well. Add water or broth if you prefer a thinner soup.
