This Easy Slow-Cooker Taco Soup combines ground beef, ranch seasoning, taco seasoning, fire-roasted tomatoes, corn, black beans topped with cheddar cheese, and tortilla strips.

Ingredients
  

  • 2 pounds lean ground beef
  • 1 large yellow onion, diced
  • 1 packet dry ranch seasoning
  • 2 packets taco seasoning (I used mild Taco Bell)
  • 4 cups chicken broth
  • 1 tablespoon garlic, minced
  • 14 ounces tomato sauce
  • 28 ounces fire-roasted tomatoes, diced with juices
  • 14 ounce can black beans, drained and rinsed
  • 14 ounce can corn, drained

For Garnish (optional)

  • tortilla strips
  • sour cream
  • cheddar cheese, shredded

Instructions
 

  • Brown beef, onion, and garlic in a skillet over medium-high heat until no longer pink.
    Drain and place the beef mixture in the slow cooker with the remaining ingredients. stir well and cover.
    Cook on low 6-8 hours or on high 3 - 4 hours.
