These easy Mexican Pizzas are filled with seasoned ground beef, refried beans, Colby Jack cheese, enchilada sauce, and topped with salsa. Ready in 30 minutes.

Easy Mexican Pizzas

Ingredients
  

  • 1 pound lean ground beef
  • 1 packet taco seasoning (I used Taco Bell)
  • 1/2 cup water
  • 8 flour tortillas (taco size)
  • 1 can (10 ounces) refried beans
  • 1 can (10 ounces) red enchilada sauce
  • 2 cups shredded Colby jack cheese
  • 1 jar salsa – for topping
  • Optional topping sliced black olives and chopped green onions

Instructions
 

  • Preheat oven to 400°FIn a large skillet brown ground beef, breaking up into small pieces. Drain and return to pan. Add taco seasoning and water. Bring to a boil, reduce heat and simmer until most of the liquid is absorbed.
    In a microwave-safe bowl, heat the refried beans until warmed through.
    Spread about 1/4 cup of beans evenly over the bottom of each tortilla. Top with taco meat.Note: The taco meat will be evenly spread over 8 tortillas. Place another tortilla over the top of the meat. top with remaining taco meat. Spread about 2 tablespoons of enchilada sauce evenly over the tortilla.
    Sprinkle the cheese in an even layer over the top. Place each pizza on a baking sheet and bake for 8-10 minutes until the cheese is melted and everything is hot.
    top with salsa, green onions, and olives, if desired. Slice and serve.
