Sesame Chicken Lo Mein

Ingredients
- 2 pounds chicken breast, tenderloin, or thigh, cut into 2 inch pieces
- 14 oz. Chinese style lo mein noodles
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 2 tablespoons olive oil to sauté
Sauce ingredients
- 1 tablespoon garlic, minced
- 1/3 cup low-sodium soy sauce
- 4 tablespoons ketchup
- 1/4 cup brown sugar, packed
- 4 tablespoons rice vinegar
- 2 tablespoons toasted sesame oil
- 4 tablespoons water
- 1 tablespoon cornstarch
Garnish
- 3 tablespoons toasted sesame seeds
- green onions, chopped
Instructions
- Start a large pot of water to boil. Season the chicken with garlic and onion powder. Combine with 1 tablespoon of olive oil. In a large skillet over medium/high heat, add 1 tablespoon of olive oil. Be sure to brown the chicken, but don't overcook it. While the chicken is cooking, prepare noodles according to box directions. Add all sauce ingredients together in a small saucepan except cornstarch. Cook the mixture on low, stirring often. Cook for 5 minutes. Add cornstarch slowly whisking the clumps. If you would like a thicker sauce, slowly add more cornstarch until the desired consistency is achieved. Drain noodles. Add chicken and toss with sauce. Top with toasted sesame seeds and green onions. Serve immediately.
