

Slow-Cooker Split Pea & Ham Soup
Loaded with nutritious veggies & complex flavor, this Split Pea Soup is a classic that’s perfect for chilly days and weeknights! It is also a great recipe to use up leftover ham.

Ingredients
- 1 pound dried split peas, rinsed
- 2 large russet potatoes, peeled and diced
- 1 teaspoon ground white, green, or black pepper
- 3 bay leaves
- 3 large carrots, peeled and sliced
- 1 tablespoon minced garlic
- 6 cups low-sodium chicken broth
- 1 large yellow onion, chopped
- 2 tablespoons fresh oregano, stems removed and chopped or 2 teaspoons dried
- 2 tablespoons fresh parsley, stems removed and chopped or 2 teaspoons dried
For the ham: choose one of the following
- 2 1/2 cups diced ham
- leftover ham bone with meat on it
- 1 ham hock
Instructions
- Add all ingredients to slow cooker and mix well. Cook on low for 8 to 10 hours or high for 5 to 6 hours. Stir well. Add water or broth if you prefer a thinner soup.
