Loaded Baked Potato Bar
This Loaded Baked Potato Bar recipe is budget-friendly and a great way to feed a large hungry group.
Ingredients
- 8 large russet potatoes
- 1 cup white onion, chopped
- 12 ounces salsa
- 12 ounces sour cream
- 2 cups cheddar cheese, shredded
- 1 pound lean ground beef
- 1 package taco seasoning (I used Taco Bell)
- 4 ounces package of real bacon pieces or 8 pieces of bacon cooked and crumbled
- 1 cup ranch dressing
- 5 green onions, chopped (optional)
- fresh cilantro, chopped (optional)
Instructions
Topping directions
- Cook brown ground beef, drain and prepare the meat according to package directions. Prepare the topping and set aside.
Oven directions
- Preheat oven to 400 degrees Fahrenheit. Scrub and rinse potatoes well. Rub a small amount of olive oil over the potatoes, evenly coating them.Make a small cut on the skin of the potato. This will prevent the potato from splitting while baking. Place potatoes on the middle rack and bake between 45 minutes to an hour, depending on the size of the potatoes. Be sure to cook your potatoes until they are tender. After the potatoes are done cooking, allow them to cool for 5 minutes and slice them down the middle.
Grill directions
- Scrub and rinse potatoes well. Sprinkle with salt and wrap tightly with foil. Place on the hottest part of the grill and close the lid. Cook between 45 to 1 hour, depending on the size of the potatoes. After the potatoes are done cooking, allow them to cool for 5 minutes and slice them down the middle.
Slow-Cooker directions
- Scrub and rinse potatoes well. Rub a small amount of olive oil over the potatoes evenly coating them. Sprinkle with the desired amount of salt, wrap in aluminum foil, and place in the slow cooker. Cook on low heat for 7 hours or on high heat for 4 to 5 hours. After the potatoes are done cooking, allow them to cool for 5 minutes and slice them down the middle.
Garnish
- Serve the potaoes and toppings in one spot or on seperate plates. Enjoy!
