Easy Greek Pasta Salad
Greek Pasta Salad is loaded with tomatoes, cucumbers, Kalamata olives, red onion, green pepper, and plenty of feta cheese.
Ingredients
Salad Ingredients:
- 12 ounces pasta (I used penne)
- 1/2 cup pitted Kalamata olives
- 1 small red onion, chopped
- 1 English cucumber, chopped
- 1/2 cup fresh parsley, finely chopped
- 2 cups (1 pint) cherry tomatoes, halved
- 1/2 cup feta cheese, crumbled or cubed
- 1 cup heart of palm, drained and sliced
- salt and pepper to taste
- 1 14 oz. can chickpeas, drained and rinsed
Dressing Ingredients:
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 large lemon, juiced
- 3 tablespoons fresh basil, minced or 1 tablespoon dry
- 1 teaspoon garlic, ground
Instructions
- Whisk together dressing ingredients and set aside. Cook pasta al dente according to package directions. Rinse under cold water.Combine all salad ingredients in a large bowl. Add dressing and gently toss until evenly combined.Refrigerate at least 1 hour before serving.
