Roasted Chili Lime Chickpeas
These Roasted Chili lime Chickpeas are golden and crispy. Easy and healthy snack.
- 1 15 ounce can chickpeas drained, rinsed, and patted dry
- 1 tablespoon olive oil
- 1 1/2 teaspoon chili powder
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- 3/4 teaspoon sea or kosher salt
- Preheat oven to 450 degrees. Line a 15x10x1 in. baking sheet with foil or silicone mat. Drain and rinse chickpeas with water. Pat dry with a paper towel or dishtowel.In a bowl, toss chickpeas, olive oil, and spices in a bowl until thoroughly coated in the mixture. Spread chickpeas in a single layer over foil, removing any loose skins. Roast in the oven for 25 minutes, giving the cookie sheet a little shake every 10 minutes or so. Allow chickpeas to cool slightly, and store in an airtight container for up to 3 days.
